Cheese-making during the opening times of the exhibition,
Every day from 9.00 am to 12.30 pm , 2 to 4 times a day, depending on season.
In view of the uncertainties of the geopolitical situation and the pressure exerted on exports, a restriction for the Gruyère AOP Traditionnel of 5% of the 2025 base quota has been decided by the sector.
From September to December 2025, the production will be adjusted as follows:
From Friday to Monday: 3 productions with cheese vat outputs at 10:30 AM, 11:30 AM, and 12:30 PM
From Tuesday to Thursday: 2 productions with cheese vat outputs at 10:30 AM and 12:30 PM
